Gluten-free vegan pancakes recipe

I missed pancakes, but hadn’t made them since I became vegan and gluten-free, so I had no idea what to do. Most pancake recipes are filled with dairy, sugar, and other unhealthy ingredients, so I decided to develop my own super simple, sweetener-free, vegan and gluten-free recipe! I also added on a delicious, clean, 2-ingredient sauce.

Ingredients

  • 1 cup gluten-free oats (Bob’s Red Mill)

  • 1 scoop plant protein or collagen (Vital Proteins - not vegan)

  • 1/4 cup chia seeds

  • 1 ripe banana

  • 1.5 cups oat milk

  • 2 cups fresh ripe strawberries

  • 3 teaspoons vegan butter

Note: The riper the banana, the sweeter the pancakes will be. Also make sure to use ripe strawberries for a sweet sauce (you can replace them with raspberries if you prefer) .

** this recipe makes 3 large, thick pancakes

Recipe

The pancake batter

  1. To make a chia egg (a common vegan baking replacement for normal eggs), pour 1/4 cup chia seeds into a cup, pour 1/3 cup water, mix it up and set it aside for now.

  2. To make oat flour, pour 1 cup of gluten-free oats into a blender or food processor. Blend until it’s the smooth consistency of flour.

  3. Add a scoop of protein or collagen powder and a ripe banana (in pieces) into the blender.

  4. Add 1.5 cups of oat milk into the blender, and blend it up until it’s smooth.

  5. Add the chia egg (which should by now be thick and gooey) to the blender and blend until everything is well mixed.

The pancakes

  1. Heat up a frying pan, add a teaspoon of vegan butter and let it melt before each pancake so that the batter doesn’t stick.

  2. Pour out a third of the batter into the middle of the frying pan and swivel it around to thin out the pancake (it should be about 8-10 inches in diameter).

  3. Once the bottom is a medium/dark brown, flip the pancake.

  4. Let the second side brown up and you’re done!

  5. Repeat with the rest of the batter.

The sauce

  1. Cut up 2 cups of fresh ripe strawberries and throw into a blender.

  2. Add 1/2 a cup of water to the blender.

  3. Blend! If it’s too thick, you can add more water.

Plate the pancakes, pour the sauce on top, and that’s it! Enjoy!
